Add basic coverage reporting for RPC tests

Thanks to @MarcoFalke @dexX7 @laanwj for review.

Zcash: Includes all the backend changes, but excludes the --coverage flag
added to rpc-tests.py as we have not yet migrated away from rpc-tests.sh.
